300g de pois chiches cuits et égouttés; conserver un peu d’eau de cuisson
2 à 3 cuillères à soupe de Tahin (purée de sésame)
Jus d’1/2 citron
1 à 2 gousse d’ail
Huile d’olive
1 cuillère à café de sel
1 cuillère à soupe de cumin
Huile de sésame : optionnel
Préparation
Mettez les pois chiches égouttés dans un mixeur puis, mixez légèrement en ajoutant un peu d’eau de cuisson.
Ajoutez le tahin, le jus de citron, l’ail, le cumin et le sel et continuez de mixer en incorporant l’huile d’olive petit à petit jusqu’à obtenir une texture homogène et crémeuse.
Couvrez l’houmous d’huile de sésame et de cumin, si vous le souhaitez.
